There is an ancient tradition which has prevailed in Formentera and that cannot be found on any of the other islands. We are talking about “peix sec”, a dried fish. At ES REBOST we wanted to revive this product, which is made of a rather cartilaginous local fish. Its preparation consists of an elaborate process. First, the fish has to be kept for a specific amount of time in brine. Then, it is hung in the sun, somewhere within reach of a sea breeze. Once it is dried, it is toasted, sliced and…. finally is ready to eat!
